Recipe: Paleo Banana Bread

Banana Bread
Inspired by the banana bread/cake recipe from Civilized Caveman Cooking (I found his version too moist – my first attempt at it fell apart).
Ingredients
  • 4 bananas, very ripe
  • 4 eggs
  • 1/4 cup almond butter, or another creamy nut butter (not peanut)
  • 3 tablespoons butter or coconut oil, melted
  • 1/4 cup coconut sugar
  • 1/2 cup coconut flour
  • 1/2 cup arrowroot starch/flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1/2 tsp sea salt
Instructions
  1. Preheat your oven to 350 degrees fahrenheit.
  2. Combine your bananas, eggs, and nut butter, and butter/coconut oil in a food processor until smooth.
  3. While the processor is still going, add coconut sugar, coconut flour, arrowroot starch, cinnamon, baking soda, baking powder, vanilla and salt.
  4. Grease a 11 x 7 glass with butter or coconut oil.
  5. Pour in your batter and spread it evenly throughout.
  6. Place in your preheated oven and bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool for 30-45mins.
  8. Slice and serve.
